Turn that frown upside down because you can still enjoy making delicious breakfast foods for yourself without cups of sugar and loads of carbs that are typically aplenty in breakfast foods. It’s time to put that waffle maker back into action! If you don’t have a waffle maker, you could alternatively use this recipe and make sweet potato pancakes, which are equally delicious.

By the way, sweet potatoes also have numerous health benefits, from being rich in fiber, lower in fat and cholesterol, and being packed with carotenoids, which have been linked to cancer prevention and anti-aging.

Ingredients

  • About 1 1/2 cups sweet potato, peeled and grated
  • 2 eggs
  • 2 tbsp coconut flour
  • 1 ripe avocado
  • 2 green onions, finely diced
  • 1 lime, freshly squeezed
  • 2 tablespoons fresh chopped cilantro
  • Sea salt and pepper
  • Non-stick coconut oil spray

Instructions

  1. First, preheat waffle iron. Following that, in a large bowl, stir together grated sweet potato, egg, coconut flour, and 1/2 teaspoon salt. After that, spray waffle iron generously with nonstick spray. Then, spoon one-half of the sweet potato mixture into the center of the waffle iron. Finally, close the lid and cook for 5-8 minutes, or until the waffle begins to turn medium golden brown. Remove waffle and repeat with second half of the batter.
  2. While waffles cook, poach or fry eggs. After that, peel and pit avocado. Then, mash together with diced green onions and lime juice. Finally, salt and pepper to taste.
  3. Serve and enjoy!
